Physicochemical properties Light yellow powder, slightly odor, slightly astringent.
Solubility: Soluble in methanol, ethanol, acetone, pyridine, ethyl acetate and dilute lye, insoluble in benzene, ether, chloroform, petroleum ether and other organic solvents. It has enhanced solubility in water and can be dissolved in hot water.
Thermal Instability: Malonyl isoflavone glucones in soy isoflavones are not heat-resistant and are easily converted to the corresponding isoflavone glycosides when heated.
